Couscous Chicken or Pork Salad

Cooked couscous is combined with chopped cucumber, parsley, shredded carrot, sliced green onions, radishes, and chicken breast or pork. Tossed with a dressing of lemon juice, olive oil, cumin, curry, and pepper. (FRESH ONLY; Consume in 3 - 5 days).

Oriental Pork or Chicken and Wild Rice Salad

Wild Rice, bok choy, pea pods, shredded pork (or chicken), and mandarin oranges are combined with a rice vinegar, oil, ginger root, and sugar dressing. (FRESH ONLY; Consume in 3 - 5 days).

Roasted Herb Chicken Salad

A delicious combination of store-bought roasted chicken, capers, water chestnuts, herbs, parsley and cilantro, scallions, and celery tossed with a mixture of light sour cream and mayonnaise. Salt & pepper to taste.

Vegetable Penne with Grilled Chicken

(Entree & Side)

Bite-sized pieces of chicken and cooked penne pasta are combined with a variety of oven-roasted vegetables: broccoli, cauliflower, mushrooms, carrots, red onions, scallions, yellow squash, zucchini, corn kernels, red and green bell peppers. Tossed with minted pesto sauce. Topped with Parmesan and pine nuts. This dish can be consumed warmed or cold. (Because of the Pesto, this is not a low-fat meal, but certainly meets the five-a-day vegetable requirement!)
