Baked Eggplant and Lamb Patties

(Entree & Side)

Eggplant slices are brushed with olive oil, sprinkled with pepper and rosemary, baked and then topped with baked lamb patties made of ground lamb, olives, breadcrumbs, egg, Parmesan, oregano, and garlic. Topped with fresh tomato slices and shredded Monterey jack cheese. (Ground beef can be substituted.)

Layers of baked eggplant and ground lamb are seasoned with cinnamon, homemade Marinara (tomato, garlic, oregano, thyme, onion) and topped with a white sauce made with butter, flour, milk and egg.

Cubed pieces of lamb are simmered in chicken broth with pieces of potatoes, carrots, onions, turnip, barley, bay leaf and thyme. Garnished with green onions. Noodles or rice as a side, upon request.

Moroccan Lamb with Couscous

Ground lamb meatballs are made with breadcrumbs, onion, parsley, coriander, pepper, cinnamon and nutmeg. Served over a bed of couscous with dried apricots and currants and topped with a tomato sauce made of tomatoes, garlic, cumin, chili powder, and cayenne.
