Baked Eggplant and Beef Patties (Entree & Side) |
Eggplant slices are brushed with olive oil, sprinkled with pepper and rosemary, baked and then topped with baked beef patties made of lean ground beef, olives, breadcrumbs, egg, Parmesan, oregano, and garlic. Topped with fresh tomato slices and shredded Monterey Jack cheese. (Ground lamb can be substituted.) |

Chunks of beef with kidney beans, great northern beans, and black beans are simmered with a variety of spices including cumin, chili, paprika, oregano, cayenne, cocoa, sugar, and bay leaves, tomatoes, onions, green bell pepper, jalapeno, garlic, ancho chili, sun-dried tomatoes and dark beer.
